Roasted Duck Breast with Salad and Mashed Potato

Ingredients for 1 person:
• 1 pcs Golden Pig Roasted Duck Breast
• ½ Potato
• ½ Beetroot
• ½ bowl of Rocket leaves

Mashed potato ingredients:
• ½ potato, peeled and halved
• 1 tbsp mustard
• squeeze of fresh orange juice
• 25g butter, melted
• 2 tbsp double cream
• salt and freshly ground black pepper


Open Golden Pig Roasted Duck Breast packet, place duck breast in oven and re-heat for 10 mins.

To make the potato mash, boil the potato until soft, drain and blend with all other mash ingredients.

Peel the skin and shredded Beetroot thinly. Heat up wok, add shredded Beetroot bit by bit and fry over low heat. Add a pinch of sugar and fry until crispy. Spoon potato mash onto a large plate, top with sliced Golden Pig Roasted Duck Breast and serve with Beetroot and rocket leaves.
